What’s Fresh in June? We’ve got the Beets!! Beets are such a great source of antioxidants and nitrates, which can help lower blood pressure. This beautifully colored root vegetable is in the amaranth family, along with chard and spinach. That explains why the leafy, edible greens at the tops of beets look so much like chard. Beets and beet greens are not only great for eating and juicing but also for dyeing. The vibrant red color is great for dyeing cotton and wool items and also eggs. Try dyeing your next t-shirt using the beet dye recipe below!
As a part of the collaborative Farm to School Program with The Ferguson-Florissant School District, the team at EarthDance Organic Farm School has started the “What’s Fresh” initiative! What’s Fresh highlights farm fresh organic produce in its season, in hopes of educating families, neighbors, staff, and students on the benefits of growing and eating fresh produce (or finding other creative uses for it!) For the Beet Dye
Chop the beets into 1 inch pieces (no need to peel unless they are extremely dirty). Place the beets in a pot and cover with enough water to cover the beets by two inches. Bring to a boil then reduce heat, simmer ’til the beets have turned a lighter shade of red and are easily pierced with a fork. Let cool to room temperature and place the liquid and beets into a blender. Blend on high until the beets are fully processed. Place a fine mesh strainer over a large bowl and pour the beet slurry into the strainer. Press down on the beets to extract as much liquid as possible. You can discard the beets or save them for another purpose—we made a spicy beet & yogurt dip with pita and it was delicious. Pour the dye into squeeze bottles if you have them or just set the bowl to the side.
