Chickpeas are an easy and cheap alternative for your protein in meals. This simple chickpea mash is perfect as a sandwich or snack. Make sure to top it with as many delicious herbs or vegetables that you can find in your garden.
Makes: 4 servings
1 can organic chickpeas, rinsed and drained
1/2 red onion, chopped
1 celery stalk, chopped
1/4 C local pickles, chopped
1/4 C plain Greek yogurt (or mayo)
1 T Dijon mustard
Salt and pepper, to taste
4 large pieces of toasted sourdough
Toppings: sliced radish, dill, parsley, arugula, scallions, or any other farm fresh veggies you’d like!
Directions: Toast bread slices until golden. Mash up chickpeas and onion together in bowl. Add all other ingredients and mix to combine. Serve with any toppings you’d like and enjoy!
