Cast iron pizza for the win this Meatless Monday! This pizza is full of fresh veggies and quality dough to make for a delicious lunch or dinner.
Makes: 4 servings
1 cast iron skillet
1/4 C cornmeal
1 ball of pizza dough
1/4 cup olive oil
1/2 C shaved Brussel sprouts
1/2 C shaved kale
1/4 C peeled sweet potato ribbons
1/2 C mozzarella cheese, sliced or shredded
Salt and pepper, to taste
Optional toppings: oregano, honey, red pepper flakes, Italian herbs
Directions: Heat up cast iron over low heat and sprinkle cornmeal around pan. Turn oven to 500 degrees F or higher, if possible. Then, put rolled out pizza dough into cast iron and fit to pan. Drizzle with olive oil to coat and add salt and pepper. Let cook for 1 minute, then add veggies and cheese and Italian herbs. Cook for 2 minutes. Place cast iron in oven for 15 minutes or until cheese turns golden and crust is cooked through. Remove pizza, let cool and slice. Drizzle with honey and red pepper flakes if desired.
