Colleen’s Farm Fresh Sweet Potato Brownies

From December 1-8, beautifully framed photography featuring work from a photography trip and workshop to New Zealand was sold to support EarthDance Organic Farm School at Bullivant Gallery. During the opening reception on December 1, EarthDance staff was on hand to share about our Organic Farm School and to serve farm fresh appetizers with veggies from the Farm. Many patrons raved about our staff member, Colleen Daly’s farm fresh recipes, so we thought we’d share her recipe for Farm Fresh Sweet Potato Brownies!

Colleen’s Farm Fresh Sweet Potato Brownies

Time: 45 min.
Makes: about 16 brownies
Nonstick vegetable oil spray
1/2 C sweet potatoes, pureed (about 1 medium sweet potato)
1 1/4 C sugar
3/4 C natural, unsweetened cocoa powder
1/2 t kosher salt
1 t vanilla extract
2 large eggs
1/3 C flour
Directions
1. Preheat oven to 325 degrees F. Spray an 8 x 8 x 2 baking dish (or a square cake pan) with nonstick cooking spray.
2. Rinse and chop sweet potatoes into cubes. Boil in water for about 20 minutes, or until soft enough to mash with a fork.
3. Drain sweet potato and put in food processor. Blend until smooth.
4. Combine sugar, cocoa, and salt in small bowl. Add into sweet potato puree.
6. Add vanilla, and then add eggs one at a time into food processor.
7. Fold in flour with spatula.
8. Pour batter into cake pan and spread evenly. Cook for about 25 – 30 minutes, or until you stick a toothpick through and no batter comes out with it.
Sweet potatoes add a healthier twist to these delicious brownies by replacing butter and adding a whole lot of nutrients and fiber. Enjoy!
