Aunt Cornelia’s Crispy Chunks (11 Day Pickles)

  • 8 cucumbers
  • 2 cups cider vinegar
  • 2 cups water
  • 2 tsp alum
  • 4 cups sugar
  • 2 cups white vinegar
  • 1 Tbsp mixed pickling spice
  1. Cover whole cucumbers with salt brine using ½ cup salt dissolved in 1 quart boiling water. Let stand for 3 days and then drain.
  2. Cover with cold water. Keep covered in the water for 3 days.
  3. Remove them from the water and cut into chunks.
  4. Combine 2 cups cider vinegar, 4 cups water, and 2 teaspoons alum. Bring to a boil and pour over the cucumbers. Let stand for 2 days and then drain.
  5. Combine 2 cups white vinegar, 4 cups sugar, and 1 teaspoon mixed pickling spices. Heat to boiling and pour over pickles. Let stand for 1 day.
  6. Drain syrup and bring to a boil and pour over pickles. Do this 4 times.
  7. Can or store in crock in the refrigerator.
