11-Day Pickles Recipe
Aunt Cornelia’s Crispy Chunks (11 Day Pickles)
- 8 cucumbers
- 2 cups cider vinegar
- 2 cups water
- 2 tsp alum
- 4 cups sugar
- 2 cups white vinegar
- 1 Tbsp mixed pickling spice
- Cover whole cucumbers with salt brine using ½ cup salt dissolved in 1 quart boiling water. Let stand for 3 days and then drain.
- Cover with cold water. Keep covered in the water for 3 days.
- Remove them from the water and cut into chunks.
- Combine 2 cups cider vinegar, 4 cups water, and 2 teaspoons alum. Bring to a boil and pour over the cucumbers. Let stand for 2 days and then drain.
- Combine 2 cups white vinegar, 4 cups sugar, and 1 teaspoon mixed pickling spices. Heat to boiling and pour over pickles. Let stand for 1 day.
- Drain syrup and bring to a boil and pour over pickles. Do this 4 times.
- Can or store in crock in the refrigerator.
