Swiss Chard & Caramelized Onion Frittata

This frittata recipe is perfect for an easy and cheap breakfast, lunch, or dinner! Plus, if you don’t like the taste of greens on their own, this is an easy way to incorporate some more into your diet.

If you have never eaten swiss chard, or you are just curious about it’s health benefits, it is known for being one of the most nutritious vegetables in the world. Swiss chard has as little as 35 calories per cup, while adding loads of fiber, vitamins (A & K), and iron, and has also been shown to work as a great antioxidant. It is a great addition to any salad or soup, but is also delicious sautéed as a side dish.

Swiss Chard & Onion Frittata

8 farm fresh eggs

1 yellow onion, sliced

1 (2 C) bunch Swiss chard, chopped

1/2 C Swiss cheese, grated

2 T Olive oil

1 t oregano

Salt and pepper, to taste

Directions: Turn oven on high broil. Heat a medium/large cast iron skillet with enough oil to     coat pan, and add onions. Slow cook onions on medium heat for about 8 minutes. Raise heat to medium-high and saute until onions caramelize, about 2 min. Add chopped chard. Stir and cook about 2 min. Mix eggs and cheese together with salt and pepper in bowl and add to pan. Cook for about 7 min on low heat. Add oregano, salt, and pepper. Once bottom edges set, bake in oven until cooked through, about 4-5 min. Remove from oven and cut into wedges and serve. Enjoy!!!!
