Meatless Monday: Sweet Potato Pancakes

Inspired by the fresh and delicious maple syrup harvested by our farmers from the front yard, we created the easiest pancake ever using sweet potatoes for #meatlessmonday breakfast, lunch, or Brinner.

Sweet Potato Pancakes

Ingredients:

1 organic sweet potato, mashed
2 farm fresh eggs
1 t vanilla
1 t cinnamon
Pinch of nutmeg
Toppings: honey, maple syrup, walnuts, peanut butter, chocolate chips, or anything else!

How to: Poke sweet potato with fork and roast in oven at 450 degrees until soft, for about 1 hour (this can be done ahead). Mash sweet potato and remove skins as much as you’d like. Add eggs and whisk. Add spices. Whisk together until smooth. Pour 1/4 C batter into greased pan and cook on each side for about 4 minutes. Add your toppings and enjoy!! {Sometimes I add oats to my batter for some extra grains as well, or 2 T of almond flour.}
