LaTia Thomas first connected to EarthDance as an AmeriCorps VISTA, serving as Communications Coordinator in 2014. The next year, LaTia enrolled in the Farm & Garden Apprenticeship program. She is passionate about ensuring that everyone has access to healthy food, prepared with love. Following her graduation as the 2015 class’s valedictorian, she founded the non-profit Plenty STL, to mobilize a volunteer corps with a mission to bake treats and pack nutritious lunches for the clients of St. Patrick’s Center. In order to introduce more youth to a complex understanding of St. Louis’ food system’s challenges and possibilities, she initiated the program, Dig In! which provides free culinary adventures and education for St. Louis city teens.
